Ginger Pie Cake Recipe

Instructions: Preheat Oven:  Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set it aside.

Make Crust:  In a medium bowl, combine gingersnap cookie crumbs, 1/4 cup granulated sugar, and melted butter.

Bake Crust:  Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

Prepare Filling: In a large bowl, beat the cream cheese until smooth. Add brown sugar and sour cream, and beat until well combined.

Bake:  Place the pan in the oven and bake for 50-55 minutes, or until the edges are set but the center still jiggles slightly when shaken.

Serve: Before serving, remove the pie cake from the springform pan and transfer it to a serving platter.
